Ingredients
1/2 Pound
Macaroni
1 Small
Onion
2 Tbsp
butter
1 Tbsp
flour
1/4 Tsp
dry mustard
3/4 Tsp
salt
pepper to taste
2 Cups
milk
1/2 Pound
Cheddar Cheese
3/4 Cup
fresh bread crumbs
4 Tsp
butter, melted
Directions
  • Cook macaroni as label directs.
  • Start heating oven to 400 F.
  • Grease 1 1/2 pt casserole dish.
  • Mince onion (about 4 Tsp); put in double boiler with 2 Tbsp butter.
  • When butter is melted, stir in flour, mustard, salt and pepper.
  • Slowly stir in milk; cook until smooth and hot, stirring often.
  • Slice about 3/4 of cheese right into sauce; stir until cheese is melted.
  • When macaroni is tender, drain into colander; turn into casserole.
  • Pour cheese sauce over macaroni, tossing lightly with a fork so that all macaroni get nicely coated.
  • Top  with rest of cheese.
  • Toss bread crumbs with 4 Tsp melted butter.
  • Sprinkle over cheese.
  • Bake, uncovered for 20 minutes.
