I discovered this recipe by accident one day while making Poached Eggs On Toast. I just got lazy and decided to just mix it up.

Directions

1. Heat a pot of water to a boil and reduce heat to a simmer.

2. Crack 12 eggs in a bowl leaving the yolks un-broken. (Makes them easy to work with).

3. Toast all 16 slices of bread and lightly butter them. As each of the sets of toast are completed, dice into 6 squares and put into a covered bowl to keep them warm.

4. Dump the bowl of eggs into the simmering water and cook just untill the clear egg is white and solid. (About 5 minutes).

5. Use a slotted spoon to fish out the eggs being careful not to break then and put them on top of the buttered toast cubes.

6. Mix together gently and serve.

Serve : Family of 4-6

Ready in : 25 Minutes

Good way to make a mess of breakfast fast for a lot of little ones. The grandkids--who are all together for our vacation--gobbled it up. Definitely add salt and pepper, and maybe if I do it again, some Tabasco.

Hey, what an innovative way to serve breakfast for the whole family! It may be unconventional, but it's surprisingly good if you like soft eggs on toast. A total comfort food. The only I'd change is that this makes a lot, and we only had 4 people, so there was a lot leftover, and it isn't as good after it cools. I'd maybe do half or 2/3 for a smaller group.
