I made this up after we got back from Hawaii and I wanted to recreate some of the amazing flavors we'd had at our hotel's luau on the beach. It brings me right back there every time I make it, especially if I serve it on our deck on a warm, breezy evening.

Directions

Cut pineapple into chunks. Mix with the rest of the fruit (you can add chunked apples if you have a big crowd and want to stretch this inexpensively--just increase the dressing a bit). Combine last 4 ingredients for dressing, pour over fruit. Toss gently to coat.

Serve : 6

Ready in : 20 minutes

I didn't have all these fruits on hand, but I used what I had (strawberries, blueberries, cantaloupe, and honeydew). And anyway, it's the dressing that matters here--and it's pretty good. It does seem to recall Hawaii, and this makes a nice dessert on a summer night. Very satisfying--gives you a touch of sweet without all the calories.
