Delicious way to use up leftover matzo if you have it--and also very low-cal!

Directions

Preheat the oven to 350 degrees. Sprinkle both sides of the matzo with a little water to soften slightly. Place the matzo on a lightly oiled foil-covered baking sheet. Spread it with the pizza sauce, top with the veggies and sprinkle with the cheese. Bake until cheese melts and bubbles. If desired, cut diagonally both ways to make four small triangles.

Serve : 1
