My grandmother from Italy made the best pasta sauce in town. It's a tomato based sauce. Unlike most recipes, you don't even have to peel the tomatoes. Check it out!

Ingredients
8
ripe tomatoes
4
cloves of garlic
2
shallots
a half cup
olive oil
2 cups
chopped fresh basil
to taste
salt
to taste
black pepper
to taste
white pepper
Directions

Cut the tomatoes in quarters, pour some olive oil on them and put them in the oven on a baking sheet at 350 degrees for one hour.  When they are cooked, cut them in stips. Then put a half-cup of olive oil in a large pot and heat it. Chop up the garlic and the shallots. When the oil is hot, add them in to the pot and stir for 1 minute. Then add the tomatoes. Lower the heat and let the sauce cook for 30 minutes. Stir occasionally. When the sauce is done, take it off the stove, sprinkle some more olive oil into it and add the basil and the salt, black pepper and white pepper to taste. And your tomato sauce is ready to add to whatever pasta you choose!

Serve : Enough for 4 people

Ready in : 15 minutes plus 90 minutes of cooking time
