This is my grandmother's recipe for gingerbread loaf or cake from the "old country." She used to make this all the time when I was a child and I still find it as delicious today as I did sitting at my kitchen table after school with a cold glass of milk. If you like gingerbread, try it!

Ingredients
3/4 cup
honey
2 cups
self-raising flour
1/3 cup
almond powder
1/2 cup
whole milk
1
egg
1/2 tablespoon
ginger
1/2 tablespoon
cinnamon
1 teaspoon
nutmeg
Directions
  1. Heat the milk and the honey over a low flame. When the mixture boils, take it off the stove. 
  2. Mix the flour, the orange zest, the almond powder and the spices in a large bowl.
  3. When the ingredients in step 2 are well mixed, make a space in the center of the mixture to pour in the milk & honey. 
  4. Mix really well with a wooden spoon until you have a smooth mixture then add the egg and mix again. 
  5. Butter the cake pan (a rectangular one is best), pour in the mixture and cook for 50 minutes at 350 degrees. Make sure a knife comes out clean from the middle before you take out.
  6. Let the cake cool slightly and then serve!

 

Serve : 4 people

Ready in : 25 minutes plus 50 minutes cooking time

Fantastic! I, too, remember this kind of gingerbread from when I was a child. I find it so much better than what passes for gingerbread in the supermarket.
