This is a great way to spice up your roast chicken! It's something my grandmother from Portugal taught my mother and my mother taught me. Enjoy!

Ingredients
1, 4 or 5 pound
chicken
8 cloves
garlic
4 tablespoons
paprika
1 tablespoon
cayenne pepper
1 tablespoon
basil
1 teaspoon
cumin
1 tablespoon
salt
1 tablespoon
pepper
6 cups
chicken stock
2 tablespoons
melted butter
1 tablespoon
oil
2 pounds
sausage (chorizo or other)
Directions

 

  1. Put the paprika, cayenne pepper, basil, cumin, salt, pepper, 6 of the garlic cloves (chopped up) and the chicken stock in a roasting pan and mix everything together.
  2. Preheat the oven to 475 degrees
  3. Reach in by the chicken's neck between the skin and the meat and insert the butter and two garlic cloves (cut in broad strips). Put one tablespoon of butter and several garlic slices on each breast.
  4. Put the chicken in the roasting pan and pour some of the stock mixture over it. Sprinkle some extra paprika on the skin for color.
  5. Cut up the chorizo (or other sausage) and arrange the pieces around the chicken.
  6. After 30 minutes in the oven, take out the chicken and pour some more of the cooking stock over it. If there is no longer enough stock (it should come up to half the height of the chorizo pieces), add some water. 
  7. Lower the oven temperature to 400 degrees and let cook for one hour more. Every now and then pour some more of the cooking stock over the top. 
  8. Take out, wait 10 minutes, cut up chicken and serve!

Ready in : 15 min plus 1.5 hrs cooking time
