I made this one up around Halloween last year and my family just loves it. Best of all it's easy and doesn't cost a bundle!

Ingredients
2 tablespoons
peanut oil
2 small
cloves of garlic
1 pound
veal, chopped up into pieces
2 tablespoons
chopped coconut
2 cups
skim milk
to taste
salt and pepper
1 tablespoon
brown sugar
1 tablespoon
thyme
1 pound
pumpkin
to taste
curry powder
Directions

 

  1. Cut up the veal and the pumpkin into chunks. 
  2. Put the oil & garlic into a pan and leave for 1 minute
  3. Add the veal to the pan to brown it
  4. Add the coconut to the pan
  5. Add the milk, sugar, salt & pepper (You can also add a little curry here if you like it spicy)
  6. Add the thyme & pumpkin 
  7. Cook & stir for 5 minutes. 
  8. Cover and let cook for 40 minutes or until the pumpkin is soft.

 

Serve : 4-6 people

Ready in : 15 min plus minimum 40 min of cooking time
