I've been making this bean soup for years and thought I'd share it with my new friends at SandyandSue!

Ingredients
1 1/4 cup
dried navy or lima beans, rinsed and drained
4 oz
salt pork or fully cooked ham chopped
1/4 cup
chopped onion
1/2 teaspoon
dried oregano leaves
1/4 teaspoon
salt
1/4 teaspoon
ground ginger
1/4 teaspoon
dried sage
1/4 teaspoon
black pepper
2 cups
skim milk
2 tablespoons
butter
Directions

Place beans in a pot, add enough water to cover them, bring to a boil, then reduce heat and simmer for 2 minutes, remove & let stand 1 hour - OR cover beans with water the day before and let stand overnight.

Drain beans and return to pot. Stir in 2 1/2 cups water, salt pork, onion, oregano, salt, ginger, sage & pepper. Bring to a boil, reduce heat, cover & simmer 2-3 hours or until beans are tender (check occasionally and if needed add more water). Add milk & butter and stir until butter is melted. 

Serve : 6

Ready in : 10 minutes, plus 3 hours of cooking time

Really good! I left out the butter since I'm trying to watch what I eat, but I used whole milk instead to get that extra thickness.
