This is hands down the best carrot cake I've ever tried. A friend made it when she had us over, I asked for the recipe, and I've been making it ever since. Try this carrot cake!

Ingredients
4
eggs, lightly beaten
1.5 cups
oil
2.5 cups
sugar
3 cups
flour
2 teaspoons
baking soda
2 teaspoons
baking powder
1 teaspoon
salt
2 teaspoons
cinnamon
3 cups
grated carrots
1 can
crushed pineapple, drained
2 cups
chopped nuts (the kind you like)
1 cup
raisins (if desired)
1 teaspoon
vanilla
2 8 oz packages
cream cheese, softened
1/2 cup
margarine
2 16 oz packages
powdered sugar, sifted
1 cup
chopped nuts
Directions

 

  1. Add eggs, oil and sugar in a large bowl and mix well.
  2. Add all dry ingredients (flour, baking soda, baking powder, salt and cinnamon) and stir until smooth.
  3. Stir in carrots, pineapple, nuts and vanilla.
  4. Pour into 3 greased and floured 9 inch cake pans.
  5. Bake at 350 for 25-30 minutes or until done 
  6. Cool in pans for 10 minutes, then remove from pans and cool completely.

For the Frosting:

  1. Cream together the cream cheese, margarine, powdered sugar, vanilla and nuts and spread between layers and over the cooled cake.

 

Serve : 10

Ready in : 30 min, plus 30 minutes cooking time

I agree! Best carrot cake ever! I use walnuts - I think that provides the best taste. I had never thought of adding the pineapple. I think that is what makes it so moist.
